Ning'an, a county-level city in Heilongjiang Province, is rich in cultural heritage. It is known for its diverse historical influences, including Yinggeling culture, Bohai culture, exile culture, Ningguta heritage, and the legacy of modern revolutionary history. These elements together form the unique regional cultural identity of Ningguta.
Yinggeling is located on the eastern side of the southern tip of Jingpo Lake. This mountainous ridge, stretching about 250 meters, has been inhabited since the Neolithic Age over 3,000 years ago. Early inhabitants—known as the Sushen people, ancestors of today’s Manchu ethnic group—once lived and thrived here.
Manchu people have lived in Ning’an for generations, preserving their rich culinary traditions. Their staple foods include millet, wheat flour, buckwheat noodles, and glutinous rice dishes—especially sticky rice cakes, which hold a special place in daily life. Pork is a favorite ingredient, often prepared in hearty dishes like white pork with blood sausage or pork stewed with sauerkraut and vermicelli—both common features on the family table. During Chinese New Year, Manchu households traditionally serve a dish called “Bowl Banquet”, also known as the “eight-bowl feast”—a distinctive cold dish set that reflects the festive and cultural heritage of the Manchu people.
Signature dishes include braised pork, chicken stewed with mushrooms, pork and sauerkraut simmered with vermicelli, tofu braised with cabbage, kelp with frozen tofu, black fungus with cabbage, dried beans stewed with pork skin, and a savory daylily stew. Other common additions are braised pork ribs, pork heart and liver (sometimes replaced with sliced pork knuckle), chive blossoms (or a local herb called ground ring), and pickled pork belly. Centered around ingredients like pork, free-range chicken, cabbage, sauerkraut, daylilies, kelp, black fungus, and vermicelli, this warm and flavorful spread captures the essence of Manchu home cooking and is a cherished symbol of family gatherings and festive celebrations.
